Pantry/Freezer Challenge

Even though I have not been posting new recipes, I am still trying to do my pantry/freezer challenge.   It's been a busy couple of weeks so I was thankful to have many items in the freezer.    I have been pretty successful in cutting back on the budget.   Tonight, I am trying to make a version of this recipe  creamy chicken penne.  I dont have the snap peas and red peppers. I am not sure if my kids would eat them anyway.  I do have the penne, Philly cream cheese cooking creme and frozen broccoli.   I also have a package of Steamfresh corn on the cob for a healthy side dish.   

Another   easy recipe  I made from the pantry this past week  was  homemade nachos using a can of refried beans, cheese, sour cream and salsa.   I was very  grateful to have fish filets and french fries  and the old standby of  frozen pizza on hectic nights.    I still have 10 days of my challege, so look for a few more recipes soon.
