Thanksgiving "Turkey" Sandwiches


When my kids were younger I made these adorable turkey themed snack size sandwiches to get them excited about the Thanksgiving holiday.  While going through old blog posts recently, I saw these pictures again which made me think it would be a good time to re-share my "Turkey" sandwiches. 





What is kind of fun about making these, is you don't actually need to use turkey.  You can fill it with any other kind of sandwich you would like.  However, if you want to use peanut butter and jelly, you may want to use something other than sweet peppers for the tail feathers

I cut the crust off the bread. We used wheat bread to have a light brown turkey. I used a circle cookie cutter for the head.  Looking at the picture, this might have been a pumpkin cookie cutter. As long as you have a roundish shape head, either works.  Fill the bread pieces with your ingredients of choice. Some good ones to use could be chicken salad, tuna, lunch meat etc.. 


Slice colorful red, orange, and yellow sweet peppers for the feathers.  I also cut a little bit of yellow for the beak, and a smaller piece of red for snood.  Attach the peppers by placing an end inside the sandwich. 


To make the eyes, I cut cranberries in half (you can also use grapes or raisins),  and attached it to the bread with a small amount of cream cheese.  

These Thanksgiving turkey themed sandwiches are super easy and fun! Serve and enjoy.

Cooking with Kyle- Ham & Cheese Bundles

 For this week's Cooking with Kyle,  he wanted to make his recipes using Easter leftovers. One of his favorite foods in the world is deviled eggs.  He could eat them every day if he could. He also loves ham.  He had 4 slices during Easter dinner.   Since we have some leftover ham, I suggested he use ham in his recipe. He came up with ham and cheese bundles.

Ham and Cheese Bundles



  • your favorite type of ham (sliced, cubed etc..) 
  •  your favorite cheese (we used shredded Kraft) 
  • crescent roll dough  
  • grated Parmesan


Deviled Eggs


  • hard boiled eggs 
  • miracle whip or mayo 
  • yellow mustard 
  • paprika 


He started out by cutting the leftover ham into small cubes. At first he was a little nervous, but gave it a try when I showed him that it was not that hard. I think this is the first time he has has used a big sharp knife. Kind of scary, but he is more than ready. He was more careful with it then I am.   



He cut  more than enough. We might be making ham salad next! 



For the next step, he placed some ham cubes and cheese one a crescent,  He placed a 2nd one on top.  Ideally we would have liked to seal the sides with fork, but the rolls  were not identical sizes.  To seal them he folded them into each other.  I helped seal the sides so the filling did not fall out.  While not perfectly shaped, they were completely sealed. 



After all the bundles were made,  he sprinkled on grated parmesan cheese.  



Bake in a 350 degree preheated oven for 15 minutes.  




He then started making the deviled eggs. He asked me to peel the eggs while he cut the ham.  He then halved them himself and removed the yolks.  






Here he is concentrating on smashing the yolk into a fine consistency. 


He mixed in a couple of tablespoons of miracle whip and maybe a teaspoon or two of mustard. In our house we like more miracle whip than mustard.  



He spooned in the yolk mixture and then sprinkled them with paprika.  A little messy, but a lot delicious!

Pepperoni Pizza Bundles

My kids LOVE pizza roll type of  snacks.  We had all the fixings on hand, so we decided to make our own, but bigger.  


Pizza bundles are a great after school  or evening snack, that are easy enough to be made by your child. 



One tube of crescent rolls will make 4 bundles.   Open the crescents, and divide into 4 rectangle.  Pinch the seam as much as possible



Spread a little bit of spaghetti or pizza sauce on each bundle. 




Kara placed the pepperoni on each piece. 



We added some mozzarella and some cheddar.  




We rolled up the bundles.  And then I sprinkled on some parmesan cheese. 




We baked them for 10-12 minutes  in a 375 degree oven.    Once they cooled a bit, they were gone almost instantly. One thing great about this recipe, is the filling can easily be changed for personal prefences.

Quick and Easy Nachos


One of our favorite appetizers when eating out is  TGI Fridays Tostado Nachos.  We get it almost every single time we have a survey coupon for $8 off an appetizer.      We decided to try and make a quick and simple version at home, that tastes pretty close to the real thing  

You will need 6" tortillas
a can of refried beans
a can of chili with no beans



Preheat the oven at 350 degrees.   Spray a little bit of cooking spray on a cookie sheet and then lay out your tortillas.   With a knife spread each one with some refried beans.  Then spread a layer of the chili meat.   


I had a request to make some without refried beans as well, so some of tortillas have only meat.


Layer the tortillas generously with cheese and bake for 10 mins. 



Serve with your favorite toppings.  We used sour cream, fresh tomatoes from the garden,  guacamole, salsa and lettuce.    You can also add jalapeno slices  if desired.  



The tortilla comes out with a little crisp to it, but if you want to make it even crispier heat a couple of minutes before adding the toppings.    Cut in half with a pizza cutter to get the resturant look, or just serve whole like in the picture. 

With both the beans and chili meat, they are quite filling. They also might give you a little bit of gas (LOL) so don't eat these  on days you might be concerned about that.    To lighten things up, we had watermelon for dessert.
