Cheesy Broccoli Dip

recipe for cheesy broccoli dip

I made this dip for New Years Eve, and it was all gone by 10 p.m.  My family LOVED it.  It is simple to make,  and perfect to serve for a crowd.  This would make a great (semi-healthy) dip for the Super Bowl.

I originally found this recipe in a free entertaining booklet  from my local Meijer store. I followed the recipe for the most part, but did leave out the 2 oz jar of pimientos.  You can add them back in if desired.

You will need 1 cup of Miracle Whip.  I think  you could use Mayo instead, but the Miracle Whip gives it a nice tangy taste.

1 pkg of frozen broccoli, chopped, thawed and drained.  I just thawed it on defrost in the microwave, and then drained the liquid.

1 small 2 oz jar of pimientos    I left this ingredient out of my recipe

1/2 cup grated Parmesan cheese

1 cup Mozzarella cheese, divided    I didn't measure, and  probably added in a bit more. We love cheese!

Preheat the oven to 350 degrees

Mix together the Miracle Whip, broccoli, pimientos if added, Parmesan Cheese and 1/2 cup of the Mozzarella cheese.  (pictured above)

Bake for 20-25 minutes. Top with the remaining cheese (add more if desired) and bake for about 5 minutes more.

It comes out warm, cheesy and delicious!
