Blueberry Banana Bread

I was going to make banana bread yesterday but when I went to make it, I realized that one of my kids ate  the bananas.  I had to wait until today, after  I could get to the store to buy some more.  

I have made this recipe several times, and it has turned out great every single time.  Tonight I decided to change it up a bit and add some blueberries to the recipe.      

You will need
1 3/4 cup flour
2/3 cup sugar
2-3 ripe bananas
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup margarine
2 Tbsp milk
2 eggs
blueberries  (I used half a pint container)


Preheat oven  at 350 degrees. Mix 1 cup of the flour and the other dry ingredients (sugar, baking powder, baking soda, salt)  in a mixing bowl.
Mash the bananas and add into the dry mixture and stir.


Add the eggs, milk, 3/4 cup flour and blueberries.  Mix until all ingredients are blended well.

Spray cooking spray in a bread pan and add your dough.  Bake at 350 for 55 mins to one hour.


It will come out a wonderful golden color.   Let cool, before cutting (if you can!)
I could only wait about 10 minutes before I had to cut it.  It was so full of blueberries and looked like a giant warm blueberry muffin. 

I added some margarine and since it was still warm, it melted into a slice of  wonderful blueberry, banana goodness.  YUM!

  16. Great recipe but you forgot to give instructions for adding the margarine. My daugther baked this today and it looks and smells yummy. Next time we'll add butter, yep we're butter snobs. Thanks for the recipe!

  19. Della.. Oops, sorry about that. You add the margarine/butter when you add the milk and eggs.

    Karan.. I think it kind of tastes like a bluberry muffin with banana bites.

    I need to make another loaf, my son has been asking me to make it all week.
